  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Potentially hazardous food were "out of temperature" in the left side refrigerator. Bologna slices were at 60 F. Deli style ham slices were at 56 F. Mixed vegetables were at 56 F. Milk was at 53 F. Mashed potatoes were at 57 F. Tuna salad was at 57 F.
    Correction: When a potentially hazardous food goes out of temperature, that is above 41 F, it is critical to know when that food went out of temperature. Potentially hazardous foods must be eaten, or discarded, within four hours of going out of temperature, or there is a risk of foodborne illness. The potentially hazardous foods that were out of temperature were voluntarily discarded by the establishment management. This corrected the violation. No potentially hazardous foods may be stored in the left side refrigerator until it is again capable of holding all foods at 41 F, or lower, at all times.

    Observation: The foodservice worker, while working in the kitchen, was wearing several rings on her fingers.
    Correction: The only ring that may be worn on the fingers, while working in the kitchen, is one plain wedding band. This is true, even when disposable gloves are worn. This violation was immediately corrected by the establishment management.
