Correction: Repair/adjust the unit so it is able to maintain foods at or below 41°F. Do not use the unit to store potentially hazardous foods while it is not operating properly. The purpose of today's visit is to conduct a routine inspection. Dish machine: Admiral 44-4 EHS provided CFM with date marking and a new employee health policy hand outs. Note to Manager: -Please fax the service report that the Admiral 44-4 sanitizer cycle is repaired within 10 days to the Fairfax County Health Department. Fax# 703-653-9448 -EHS observed labels "Temp Range 33 to 40 above" on the exterior cooling units and needs to be corrected for example "Cold Foods should be maintained at 41F or below" -EHS observed labels " Temp Range 0 to 10 below" on the exterior of the freezer units and needs to be corrected for example "Frozen foods should be maintained at 32F or below" -Once the American cheese is slice, the expiration date should be 7 days from the day it was sliced

Observation: Due to improper operation of the hot water, mechanical ware washing machine, the thermo label did not turn black, indicating that food-contact surfaces of equipment and utensils are not being adequately sanitized.--Thermo label did not activate due to the sanitizer bar not spraying.
Correction: Immediately discontinue use of the dishmachine. Repair the dishmachine so that a thermolabel will turn black. Until the machine is adequately repaired, set up the 3 vat sink to manually wash, rinse and chemically sanitize food-contact surfaces.---Sanitizer compartment was setup.

Once the american cheese is slice the expiration date should be 7 days, unless the manufacture can provide laboratory testing documents to prove the product is a non-potential hazard or longer shelf life after being sliced.
