Section 240 of the Food Regulations requires employees, whose hair could contaminate exposed food, clean equipment, etc. to wear hair restraints, such as hats, hair coverings or nets, in such a fashion to effectively keep their hair from contacting said items. This should be clearly communicated and enforced.
A Victory 1 door refrigerator was observed with a sign that the unit was freezing food. This does not constitute a food safety issue, but the unit should be repaired or removed.
The booster heater for the dish machine was not turned on resulting in the unit not reaching the manufacturer's recommended rinse temperature of 180 F. This issue was resolved during the inspection by turning the booster heater on.

  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures
    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 180ºF. The thermometer read 140ºF.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.

    Observation: Observed salad bar items on MS and HS side cold holding at improper temperatures (about 60 F)
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
