Section 240 of the Food Regulations requires employees, whose hair could contaminate exposed food, clean equipment, etc. to wear hair restraints, such as hats, hair coverings or nets, in such a fashion to effectively keep their hair from contacting said items. This should be clearly communicated and enforced. A Victory 1 door refrigerator was observed with a sign that the unit was freezing food. This does not constitute a food safety issue, but the unit should be repaired or removed. The booster heater for the dish machine was not turned on resulting in the unit not reaching the manufacturer's recommended rinse temperature of 180 F. This issue was resolved during the inspection by turning the booster heater on.
