- Remodel has recently been performed in the serving area only. Front of serving units refinished with new material and new sneeze shields. One newly purchased unit (cold, hot, hot, cold). Awaiting shatter resistant heat lamps for some serving tables.
- New floors placed in serving area.
- Ensure food permit is observed by the public.
- Proper hair restraints observed.
  • Temperature Measuring Devices (corrected on site)
    Observation: There was no temperature measuring device located in the ice cream RIF and Continental RIR.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Equipment - Good Repair and Proper Adjustment (corrected on site)
    Observation: Continental RIR was observed at 60 degree F. All food was removed from the unit and placed in the WIR.
    Correction: Repair the unit to hold at 40 degree F maximum. Ensure no food is stored in unit until repaired.
  • Equipment - Cutting Surfaces
    Observation: Observed green and red cutting boards heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations of food residue or other debris on the following nonfood-food contact surfaces: inside plastic containers holding clean utensils.
    Correction: Maintain nonfood-contact surfaces of equipment clean.
  • Critical: Toxics - Identifying Toxic Containers*
    Observation: Two chemical spray bottles observed without a label.
    Correction: Label spray bottles with contents or discard.
