Northern VA Certified Food Manager observed on duty during the time of follow-up inspection. The facility has discontinued the vacuum sealing process. The deli meats are currently being sliced, date labeled and stored in plastic containers.

    Observation: A food temperature measuring device is not provided and readily accessible for use in ensuring attainment and maintenance of food temperatures.
    Correction: Food temperature measuring devices shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperatures as specified under Chapter 3. The presence and accessibility of food temperature measuring devices is critical to the effective monitoring of food temperatures. Proper use of such devices provides the operator or person in charge with important information with which to determine if temperatures should be adjusted or if foods should be discarded.
  • Cutting Surfaces (repeated violation)
    Observation: The in use side of the preparation line cutting board was observed scratched and scoured.
    Correction: Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced. Cutting surfaces such as cutting boards and blocks that become scratched and scored may be difficult to clean and sanitize. As a result, pathogenic microorganisms transmissible through food may build up or accumulate. These microorganisms may be transferred to foods that are prepared on such surfaces.

Employee health information left with the person in charge. Currently the facility uses the outside refuse container at the restaurant a few doors down. A Northern VA Certified Food manager is required to be on duty at all hours of operation. Discontinue the vacuum sealing process that was observed. The other deli meats under refrigeration that have been sliced and wrapped in aluminum foil without being vacuum sealed must be always properly dated and used within 7-days. A follow-up inspection will be conducted in approximately two weeks.

    Observation: A food employee failed to wash his or her hands before donning gloves for working with food.

    Observation: Ice used as a medium for cooling the exterior surfaces of food is also used as food. Packs of half-n-half and cut oranges/limes stored in ice machine.
    Correction: After use as a medium for cooling exterior surfaces of food such as melons or fish, packaged foods such as canned beverages, or cooling coils and tubes of equipment, ice may not be used as food. Ice that has been in contact with unsanitized surfaces or raw animal foods may contain pathogens and other contaminants. For example, ice used to store or display fish or packaged foods could become contaminated with microbes present on the fish or packaging. If this ice is then used as a food ingredient, it could contaminate the final product.

    Observation: Single-use gloves used for more than one task, are damaged, soiled, or saved for re-use.
    Correction: If used, single-use gloves shall be used for only one task such as working with ready-to-eat food or with raw animal food, used for no other purpose, and discarded when damaged or soiled, or when interruptions occur in the operation. Soiled gloves can directly contaminate food if stored with ready-to-eat food or may indirectly contaminate food if stored with articles that will be used in contact with food.
  • Critical: Time/Temperature Control for Safety Food, Cold Holding (corrected on site)
    Observation: Egg & cheese croissants (73F - discarded), Cream cheese (63F - discarded), butter (51F - moved to cooler) and quiche (52 - moved to cooler) were observed at improper cold holding temperature.
    Correction: Except during preparation, cooking, or cooling, or when time is used as the public health control as specified under section 3-501.19, and except as specified under paragraph (B) of this section, time/temperature control for safety food shall be maintained at 5ºC (41ºF) or less. Bacterial growth and/or toxin production can occur if time/temperature control for safety food remains in the temperature "Danger Zone" of 5ºC to 57ºC (41ºF to 135ºF) too long. Up to a point, the rate of growth increases with an increase in temperature within this zone. Beyond the upper limit of the optimal temperature range for a particular organism, the rate of growth decreases. Operations requiring heating or cooling of food should be performed as rapidly as possible to avoid the possibility of bacterial growth.
