01/28/2016Routine
Currently Mikie's 7th is currently in the process of changing over into "The Element Catering Company." Walk-In and sit down dining is no longer available in the establishment and only off-site catering is being offered. The previously established water usage for the restaurant will be changing and the owner has indicated that she would like to now have a mechanical dish washing machine onsite to wash/rinse/sanitize tableware/flatware. Also, the owner has indicated that the flooring will be repaired/repainted before March. I have advised her to remove all food refrigeration equipment and tape off all HVAC vents and storage areas prior to sanding the concrete flooring to accept new epoxy paint. I also explained that the establishment will need to be closed during this repair and that food contact surfaces must be washed/rinsed/sanitized before being placed back into use.

Discussed with the owner changes that are going to be occurring within the food operation and an increased catering presence. Recommended that an appointment be made for us to meet to discuss the details and amend any paperwork which will need to be changed.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Chicken Salad & BBQ in the True Sand. Prep were cold holding at improper temperatures.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils*
    Observation: The Hobart meat slicer was observed with accumulations of dried meat on the food contact surafaces.
    Correction: Clean and sanitize these surfaces for food contact.
  • Physical Facilities in Good Repair (repeated violation)
    Observation: Floors throughout the establishment are in need of a new coat of epoxy paint.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

During this inspection it was observed that the seating capacity inside this establishment has increased over what was originally approved. Due to the constraints of the onsite sewage disposal system, seating must be reduced back to the original seating capacity or the onsite sewage disposal system must be expanded/amended to accommodate the additional seating capacity.

    Observation: Floors thoughout the entire kitchen are in need of a fresh coat of sealant/epoxy paint.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: The flooring behind the cook line were observed with an accumulation of food debris and are in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
