Inspection report was discussed with the person in charge. Although a violation for out of temperature foods was not noted, we discussed that the new milk cooler should be installed as soon as possible to avoid in unnecessary risk of food(milk) being held out of temperature. This should be a priority.

    Observation: Water from the handwashing sink in the kitchen was measured at a temperature less than 100°F.
    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.

    Correction: Clean storage equipment at a frequency to preclude accumulation of soil residues to prevent contamination of food in storage.

    Observation: Water heater observed not set at the proper temperature.
    Correction: Ensure that water heater is turned on and set at proper operating temperature.

All violations were discussed with the PIC.
Regarding violation # 1, I witnessed a teacher go behind the
serving line to get his lunch. (In view of the unauthorized personnel sign).
Talked to school principal about the situation and he said that will address
it at today's staff meeting.
Also, called school cafeteria director.
I demonstrated the correct way to get the acceptable level of Cl2 of 200 ppm for
sanitizing buckets to the staff.

    Correction: Remove unauthorized personnel. The person in charge shall not permit persons unnecessary to the food establishment operation in the food preparation, food storage, or warewashing areas.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Chlorine sanitizing solution used was not at an acceptable concentration in the sanitizing solution concentration.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 200 ppm.
