The purpose of this visit was to conduct a routine inspection. QAC sanitizer was observed in compliance at 400 PPM. All food temperatures were observed holding at safe limits. The purpose of this visit was to conduct a routine inspection. Good hand washing practices were observed by EHS during today's visit. Sanitizer at all stations was observed at appropriate concentrations. Good practices to ensure adequate hot-holding were observed.

  • Critical: Hot Holding of Potentially Hazardous Foods at 135°F or More (corrected on site)
    Observation: The following food items were observed hot holding at improper temperatures using a calibrated food temperature measuring device: harmburger at 120°F in 1DR upright hot box - right.
    Correction: Potentially hazardous foods (time/temperature conrol for safety food) shall be held hot at a temperature of 135°F or above unless the permit holder is using "time as the public health control" as specified under 3-501.19. Note: Temperature logs indicated that hamburgers had been reheated to 180°F ~30 minutes prior to temperature check. HOT BOX TEMPERATURE WAS RAISED TO 190°F to properply maintain potentially hazardous foods above 135°F.

    Observation: Trays were found stacked while wet after cleaning and chemical sanitization.
    Correction: After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food.

Please fax a copy of invoice/note stating the McCall 2DR refrigerator on right is fixed and is capable of holding potentially hazardous foods at 41F or below.
Facility Data:
Water Heater: A. O. Smith model# BTR-198 (same per the CFM, not accessible)
Hood: Cleaned every 6 months.
Pest Control: Done by the maintenance staff during summer break.
Grease Trap: Cleaned during summer break per the manager.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site) (repeated violation)
    Observation: The following food items were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Grilled chicken on salad 49F, beans on salad 45F--service line. Yogurt 43F --McCall 2DR upright right. Note: Salad packed with ice on service line and only 3 salads out on line. Moved all potentially hazardous foods from the McCall 2DR upright refrigerator. The manager was aware of the cooling capablity of the refrigerator and submitted a work order for that this morning.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth.
  • Equipment / Non Food / Design / Easy Clean (repeated violation)
    Observation: Milk crate found used for the following purposes: Elevate food box in walk-in freezer.
    Correction: Milk crates, soda crates, and/or bread racks are not designed to store or elevate food, equipment, utensils, clean linens, and single-service items. Provide only ANSI-certified (such as NSF-listed) shelving units, storage units, or dunnage racks.
  • Refuse / Drain Plug (repeated violation)
    Observation: The refuse container used to store refuse/recyclables has no drain plug.
    Correction: Drains in receptacles and waste handling units for refuse, recyclables, and returnables shall have drain plugs in place.
