The purpose of this visit was to conduct a Risk-Factor Assessment.
NOTE:
- Discussed the temperature log with the person-in-charge (PIC). Advised the PIC to take temperature of Time/Temperature Control for Food Safety (TCS) during line check.
- Observed the tiles around the mop sink were in disrepair. The PIC indicated that the tiles repair is in process.
- Strongly advised the PIC to take food temperature as receiving. Observed the food receiving at the time of inspection, but PIC did not take temperature of food items.
- At the time of inspection, the Kolpak walk-in unit was being repaired.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Cooked Egg (43F), Canadian Bacon (44F), Yogurt (43F)
    Correction: Potentially hazardous foods (time/temperature conrol for safety food) shall be held cold at a temperature of 41°F or below. THE FOOD ITEMS WERE DETERMINED TO BE OUT OF TEMPERATURE LESS THAN 2 HOUR. FOOD ITEMS WERE M OVED TO FREEZER.
  • Certified Food Manager/Certificate Process
    Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
    Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. . A copy of the photo identification card can be faxed to the food safety section at (703) 653-9448. Failure to provide a copy of the photo identification card may result in further enforcement action. PROVIDE A COPY OF CFM PHOTO ID TO HEALTH DEPARTMENT WITH IN 7 DAYS.

The purpose of this visit was to conduct a risk-factor assessment which turned into routine inspection.
NOTE: Discussed with the PIC to cover the trash at all times. The trash dumpsters' lids were located in the back of the establishment were not easy to close due to the limited space. The PIC agreed to talk to the trash company or the management to make it easy to close by spacing the dumpsters.
- Advised the PIC to monitor the temperature of beverage-air 1Dr prep in the kitchen during busy hours.
- Active Managerial Control information was discussed with the PIC.
  • Ice Used as Exterior Coolant, Prohibited as Ingredient (corrected on site)
    Observation: Ice used as a medium for cooling the exterior surfaces of food is also for beverage ice or used as food. Observed Whipped cream container stored in the ice container contaminating ice.
    Correction: After use as a medium for cooling the exterior surfaces of food, packaged foods, beverages, or cooling coils/tubes, the ice may not be used as food. The ice was discarded and replaced. Discussed with the PIC.
  • Equipment / Good Repair / Operation (corrected on site)
    Observation: The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: Beverage-Air Prep cooler 2-DR (Top/Bottom) - 43F/46F
    Correction: Repair/adjust the unit so it is able to maintain foods at or below 41°F. Do not use the unit to store potentially hazardous foods while it is not operating properly. The person-in-charge readjusted the thermostat. At the end of the inspection, the cooler was observed at 39F.

    Correction: Ensure floors are smooth and easily cleanable.

The purpose of this visit is to conduct a complaint inspection. The manager is not aware of the complaint however he stated that the procedure that McDonalds has in place is to open the bag with the tongs then place the French fries inside the bag. This procedure protects the food from possible contamination. The proper procedure was observed during the inspection. The complaint is not confirmed at this time.
