This visit was made to conduct a routine inspection. The following items need long term correction: Time/temperature control for safety foods (TCS) shall maintain hot foods at 135°F or above. All food must be protected during service. Provide approved shelving that is 6 inches off the floor.
- Food Protection from Contamination / Package, Cover, Wrap
Observation: Unwrapped or uncovered food in the following location where the food is subject to contamination: marinara sauce at the service line. The marinara sauce was placed under the sneeze shield.
Correction: Foods shall remain covered at all times.
- Food Storage / Preventing Contamination
Observation: Food stored on the floor and/or food stored less than 6 inches off the floor. Milk crates were used as shelves in the walk-in refrigerator and freezer.
Correction: Food shall be protected from contamination by storing the food at least 6 inches off the floor on approved shelving units or dunnage racks. Milk crates, soda crates, or bread racks are not suitable for food storage.
- Critical: Hot Holding of Potentially Hazardous Food at 135°F or above (corrected on site)
Observation: The following food item(s) were measured at improper temperatures: pasta. The pasta was discarded during the inspection.
Correction: Potentially hazardous foods (time/temperature control for safety food) shall be hot held at a temperature of 135°F or above.
- Toilet Room Doors Kept Closed
Observation: Observed that toilet room doors are being kept open.
Correction: Keep toilet room doors closed to prevent insect and rodent entrance and the associated spread of potential disease.

This visit was made to follow-up on a call we received concerning the lack of hot water. They are currently working on restoring hot water. The kitchen staff have boiled hot water and set up a temporary hand wash station until the hot water is restored (water temp currently 81F). This visit was made to investigate power outages. At this time of my arrival the school had some areas with no power and some areas with power. The kitchen has power, however their is currently no running hot water. The kitchen staff had already boiled water prior to my arrival for hand washing and ware washing and were applying hand sanitizer prior to donning gloves. Hamburgers and hot dogs were frozen prior to cooking, and milk temperatures were observed at 40-42F. Some milk in one of the refrigeration units was 50F and is being discarded. Staff have gotten a cooler/urn to dispense hot water for hand washing. Staff are not receiving time/temperature control for safety/TCS food delievers at this time. The power was restored prior to me leaving the site.
- Critical: Hot Water / Water Heater / Peak Demands Met
Observation: The water heater / boiler serving the food service establishment is not operable at this time. School is currently experiencing some power outages in the building. The kitchen has power, but no running hot water at this time. They have boiled water.
Correction: Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food establishment.

Observation: The following mechanical refrigeration unit is not currently operating as required to cold hold food at a temperature of 41°F or less. Walk-in at 46F.
Correction: Refrigerators shall be capable of holding foods at a temperature of 41°F or below. Repair the unit(s) immediately. Foods exposed to temperature abuse for over 2 hours shall be discarded, otherwise, the foods shall be stored in properly operating refrigerators. the Food Protection Manager had reported the problem. All potentially hazardous food were transported to TC Williama High School.

Observation: Unlabeled food containers. Observed #10 cans missing labels stored in the dry storage room.
Correction: Label working containers with the common name of its contents. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences.
