    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a @SANITIZING AGENT@ test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness
    Observation: Quaternary Ammonium sanitizing solution used was not at an acceptable concentration. The sanitizer was not at a measurable concentration.
    Correction: Adjust the sanitizing solution to 200 parts per million or otherwise identified by manufacturer's recommendations.
  • Critical: Permits
    Observation: The food establishment is in operation without possessing a valid health department permit. The posted permit expired 30 June 2012.
    Correction: Obtain a valid health department permit prior to operating as a food establishment.
