    Observation: Employees are not properly trained in food safety as it relates to their assigned duties. Employee could not answer holding temperatures for food safety and the proper 2/4 hour cooling process. EHS explain proper temps and cooling methods.

    Correction: Have the license holder require employees or applicants report to the person in charge any information about their health and activities if they are diagnosed with or had a past illness from Salmonella Typhi, Shigella spp., Escherichia coli O157:H7, Hepatitis A virus or Norovirus

    Observation: The cutting board(s) along the prep area are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Plumbing System Maintained in Good Repair
    Observation: Plumbing connections under the 3 compartment sink and the faucet at the sink by the diswasher are leaking.
    Correction: Plumbing systems and components shall be maintained in good repair.

Employee health policy reviewed and in place. Reportable illnesses also reviewed. PIC exceptionally knowledgeable. Great job!
Thawing, reheating, cooling, and cooking processes reviewed. Excellent procedures in place.
Cooked food temps taken and documented 3x per meal.
HACCP concept reviewed and understood.
FIFO method properly applied.
Good date marking observed.
Chlorine and quats used as sanitizer. Test kits for each provided.
Excellent safe food handling practices and procedures observed. PIC demonstrated impeccable knowledge and understanding of HACCP guidelines, principles, and procedures as well as safe food handling for service to highly susceptible populations. Fanrastic job!
Facility is very clean and well organized.

Cold and hot holding equipment temps monitored daily. Recommend more frequent monitoring. Documentation provided.
Quats used as sanitizer. Sanitizing buckets provided. Test kit provided- 200ppm.
Good handwashing and glove use observed.
Fantastic cooling method utilized. Roast beef cooked night before use. Cut into smaller pieces, iced, then placed inside walk in. Ice replenished as necessary and temp monitored. 41F attained <=3 hours.
