    Observation: Wall covering in (Dishwasher area) not attached so it is easily cleanable. The wall has a large crack in it.

    Observation: Unwrapped or uncovered food in the Delfield Cooler(there were drops of water falling within the cooling unit.)
    Correction: Protect food from cross contamination by storing food in packages, covered containers, or wrappings. Do not store food under the dropping water. This was done!
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: The prepared ready-to-eat (RTE) @FOOD@ in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. The food that was not date marked was discarded.

    Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as meat patties or fish filets.
    Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.
  • Warewashing Machines, Manufacturers' Operating Instructions
    Observation: The mechanical warewashing machine was not operating in accordance with the manufacturer's specifications.The wash temperature dial was cracked and showed a temperature of 140 degrees F, whereas the specifications was 150 degrees F.
    Correction: Operate the warewashing machine per affixed data plate specifications to ensure that equipment and utensils are properly cleaned and sanitized. Called Ecolab to make a service call.

    Observation: Less than 50 foot candles of light was noted in the foof preparation area. The foot candle reading was 20 foot candles on food oreparation surface.
    Correction: Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor
