| Notes: 1. The AVB installed on the mop sink does not adequately protect the water line from backflow, backpressure, and backsiphonage. There is a Y splitter valve attached to the faucet connection, and both lines are connected to hoses with sprayers. An AVB DOES NOT work when kept under continuous pressure. Please install a dual check valve. 2. Suggestions for maintaining salad and sandwich temperatures in the reach-in-coolers: Place the items on the top shelf or two. Remove sheet trays for better air flow above these items. Also store these items in the rear Hobart RIC because it doesn't receive as much heavy traffic during lunch service.

| Notes: 1. The wrapped hot dogs on the serving line were not all above 135 F. The hot dogs in the hot boxes were all above 135 F. Suggest keeping covers over the hot dogs on the line (some were covered and others were not) prior to service and preheating the buns before placing the the hot dogs in them. 2. The dish machine does not have a final rinse gauge and the school's thermolabels are not changing color. A final rinse gauge should be installed on the dish machine. Staff have no way to evaluate the proper functioning of the machine. 3. Salads and sandwiches in the pass thru as well as in all of the cold wells on the line were found above 41 F. Suggest 'blast chilling' the sandwiches and salads in the WIF after prep in the morning. Product is already being put back in the WIC after prep, but the temperature is not dropping before 41 F before it is brought out for service.
