    Correction: All foods discarded during inspection. Cooler shall not be used for stored of potentially hazardous foods until repaired or replaced and cooling properly. Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.

    Observation: Sandwich prep cooler cold holding at 46°F.
    Correction: Discontinue use of cooler until repaired and cooling properly. Improper food storage temperatures are a major contributing factor to foodborne illness.

    Observation: Sliding doors to reach in hot holding unit are cracked in several places.
    Correction: Replace doors to hot holding unit.
