    Observation: The prepared ready-to-eat (RTE) beets,raisins, and confit tomatoes in the refrigeration unit is inappropriately marked with a date or time that exceeds the maximum holding time as allowed by law.
    Correction: Discard the food at this time. Ensure all prepared RTE food is mark with the name and ""consume by"" date on the container at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served, sold or discarded within 7 calendar days or within 4 calendar days if held at 45°F. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. You can apply to Va Tech by submmitting your recipes for approval to keep food longer than the 7 days.

    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.

    Observation: The temperature measuring device in the small prep unit in the back and the walk in cooler was not properly located in the warmest part of the unit.
    Correction: Relocate the temperature measuring device to the warmest part of the refrigeration unit to properly represent the ambient air temperature.
  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures (corrected on site)
    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 165ºF for a stationary rack single temperature machine. The thermometer read180 degrees F. does not move and the dish machine does not appear to go through a rinse cycle.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.

Permits are issued based on the menu. Before adding lunch service or other meals, the establishment must enlarge the current kitchen and add refrigeration and prep table space. Food to be cooked or prepped can not be carried thru the dining area due to the risk of contamination. Due to repeated problems with the high temperature dish machine, temperature test strips or some other monitoring technique must be used daily to insure the dish machine is sanitizing dishes properly. Kitchen is very clean and orderly.
  • Cooling, Heating, and Holding Capacities (repeated violation)
    Observation: Refrigeration EQUIPMENT was overstocked and is not sufficient in number or capacity to meet the food storage demands of the establishment.
    Correction: Provide additional refrigeration necessary to maintain food items at proper TEMPERATURE. Overstocked equipment does not allow for proper air circulation and/or heat transfer. Improper food storage temperatures are a major contributing factor to foodborne illness.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures (repeated violation)
    Observation: The hot water dish machine is not going thru a rinse/sanitize cycle. The temperature sensitive strip would not read the minimum necessary temperature. The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 170 -180ºF. The thermometer read <160ºF>.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.
