This was a routine inspection. No critical violations were found at the time of this visit. The facility as a whole was noted to be visibly cleaned. There were no visible signs of pest presence on premises observed during this visit. It was also observed that the ware washing machine was replaced and the new machine was checked and tested and was observed to be operating properly. Information on the newly installed ware washing machine was collected. The new machine is a high temperature heat sanitizing unit. The concentration of the quaternary ammonium compound sanitizer for wet wiping towels and at the 3-compartment sink was noted to acceptable at, 200 ppm.

Observation: Outside refuse containers were observed to be uncovered during the inspection
Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids or doors if kept outside the food establishment.

Observation: Water from the handwashing sink at cookline line and at the ware washing machine station was measured at a temperature less than 100°F. Observed temperature was 46-F.
Correction: A handwashing sink shall be equipped to provide water at a temperature of at least 100°F through a mixing valve or combination faucet. (In-house technician resolved the problem during the inspection).
