Hot water temperature at the 3 vat sink was measured at 107F. The minimum acceptable temperature at the 3 vat sink is 110F. Please adjust the water temperature to meet the minimum required hot water temperature at the 3 vat sink. Temperature was observed at 111F at two handsinks.
When there will be more than a 15 minute wait for the service of the hot food, place it back in the oven to keep hot. Hot food, once cooked, must be held at 135F or more. Use a food thermometer to verify the temperature before service.

  • Critical: Hot Holding of Potentially Hazardous Food at 135°F or above (corrected on site)
    Observation: The following food item(s) were found hot holding at improper temperatures using a calibrated food temperature measuring device: baked ziti in pan(111°F)
    Correction: Food that is hot holding must be held at 135F or more. The ziti was in the process of being served. Discussion with CFM led to understanding that hot holding was not being done properly.
  • Temp Meas Devices/Food & Mech. Warewasher/ Scaled in Range of Use (corrected on site)
    Observation: The food thermometer was not scaled to measure cold holding below 41F.
    Correction: Provide a thermometer that can be used to measure hot or cold temperatures. Food thermometer was provided.
  • Physical Facilities Good Repair
    Observation: Observed holes in the wall adjacent to the soap dispenser.
    Correction: Patch the holes in the wall. Walls must be easily cleanable.
  • Critical: Storage of Toxics, Not Above Food, Linens, Equip., Single-Svc. (corrected on site)
    Observation: Observed that sanitizer chemicals and hand lotion stored above the 3 vat sink.
    Correction: All poisonous and toxic materials shall be stored below food, equipment, utensils, linens, and single service items to prevent contamination. Items were moved to lower storage cabinet.

  • Sanitizer Test Kit Required
    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a QUATERNARY AMMONIA test kit.
  • Certified Food Manager/Certificate Process
    Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
    Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided) within 10 business days. A copy of the photo identification card can be faxed to the food safety section at (703) 385-9568. Failure to provide a copy of the photo identification card will result in further enforcement action.
