The operator provided a metal probe thermometer, chlorine and quaternary ammonium test strips at this time. FDA Form 1B was issued and discussed with the new director during today's inspection.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Ham in the bottom drawer compartment of the Kenmore reach-in cooler/freezer unit was cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The refrigerated compartment of the Kenmore reach-in cooler/freezer was observed with an ambient air reading of 52 degrees F (TCS/PHF food products to be relocated to functional refrigerated unit).
    Correction: Repair the refrigerated compartment of the Kenmore reach-in cooler/freezer to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the refrigerated compartment of the Kenmore reach-in cooler/freezer, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Adequate thermometer, 3-vat sink, and quaternary ammonia test kit. Sanitizer tested at 200-300 ppm. Reviewed employee health with staff. Staff receives annual training and signs off after each module (including illnesses -- when can/can't work).
No leftovers are kept from each meal service.
Normal food service worker is ServSafe certified, but was not present today. Suggested displaying the certificate in the kitchen.
  • Handwashing - Using a Handwashing Lavatory - No Other Purpose (corrected on site) (repeated violation)
    Observation: The handwash station in the kitchen was being used to rinse/drain mixed vegetables.
    Correction: The handwash facility identified above is to be used for washing hands only
