    Observation: A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils, or after engaging in any activity that could contaminate the hands.
    Correction: ALL food employees shall be washing their hands OFTEN especially after handling trash, using the restroom, handling raw meats, handling soiled equipment and utensils, BEFORE putting on clean gloves, etc. Proper handwashing frequencies will aid in the reduction foodborne illness.

- Provide covered receptacle in unisex bathroom
- Provide mop rack for mop/broom storage
- Install a splash guard at handsink in kitchen (next to prep table)

This visit was made to conduct a routine food safety evaluation.
Renovations are not yet complete. Person in charge agreed to contact us when they are ready for final inspection. Construction shall not occur during hours of food preparation.
Cease and desist all reduced oxygen packaging until you have an approved HACCP plan for this process. This is a repeat violation first cited on the 19th of December 2014. A civil penalty of $100 will be issued if this practice continues.

  • Date Marking of RTE, PHF(TCS) if Commercially Processed after Opening Package
    Observation: The following ready-to-eat, potentially hazardous food is not used within 24 hours after opening the commercial package and is not properly dated for disposition within 7 days at 41°F: meats and cheeses.
    Correction: Ready-to-eat, potentially hazardous food that is commercially processed and held for more than 24 hours after it is opened must be clearly marked to indicate the date or day by which the food must be consumed on the premises, sold, or discarded. The day that the package is opened counts as Day 1. Food shall be held at 41°F or less for no more than 7 days.     Observation: Raw animal food stored over ready-to-eat food in the refrigeration unit. Raw eggs were improperly stored above cooked ham in the reach-in refrigerator. The eggs were relocated to the bottom shelf during the inspection.
    Correction: Raw foods like poultry, beef, pork, seafood, and eggs shall be stored properly inside refrigerators and freezers to prevent cross contamination. Raw foods shall be stored on shelving units BELOW or SEPARATED from all cooked foods, commercially processed foods, washed produce, leftover foods, etc.

This visit was conducted to complete a risk based food safety evaluation.
1. You must not store potentially hazardous food in the three door cooler untill it can maintain them at 41
°F
or below. This is the second time I have observed food out of temperature control in this unit.
2. Ensure that the hand washing station has a supply of paper towel. I strongly advised that you install a dispenser, rather than place towel on top of clean plates.
3. Ensure that you do not use the hand washing station for anything other than hand washing.

    Observation: The 3 door cooler in the back of house area was not working correctly, resulting in the following food temperatures being recorded: Ham 50°F/51°F/52°F, raw pork 50°F and pate at 52°F.
