Discussed the following with the person in charge (PIC): 1. Raw shell eggs stored in the reach-in cooler are used for baking only. 2. Eggs are no longer served at this facility & only pasteurized juice concentrate is used to prepare the juices. 3. Observed the employee health policy (FDA Form 1-B) signed by all employees and kept on file in the office. Observed a copy of the policy posted in the kitchen. 4. The fire extinguishers were inspected in December 2015. 5. Food source are PFG & Walmart (milk, snack foods). 6. Only fruits and vegetables leftover are cooled and reheated for service within the same week they are prepared. All leftover meat products are discarded at the end of service.
