Residential style refrigerator in the kitchen area is not laid out for a commercial setting. The produce drawers at the bottom can not be used for ready to eat foods because raw meats and eggs are stored above them. Recommend replacing with a commercial unit and until then arrange food so no raw animal foods are stored over anything ready to eat like vegetables.

    Observation: Raw foods of animal origin stored over ready-to-eat (RTE) food in the refrigeration unit.
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
  • Cooling Methods
    Observation: The methods used for cooling were not adequate.
    Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.

-The home style Frigidaire refrigerator/freezer was observed with a lot of food and it may be struggling to operate correctly with the use and amount of food. It is recommended that you start planning to replace it with a commercial unit if you wish to continue with the amount of food offered.
- The black counter refrigerator is for items that are not potentially hazardous like some drinks, commercial sealed dressing, etc. It is not able to maintain food at 41 degrees.
  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Food cold holding at improper temperatures in the Frigidaire display refrigerator and Frigidaire refrigerator/freezer.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Adjust or repair the refrigerators so that food is 41 degrees or less.
