The purpose of today's visit was to conduct a routine assessment. The following suggestions have been made:
1. Keep copies of Certified Food Manager (CFM) cards on file in facility. Have all CFMs obtain CFM card within 30 days.
Please send the following to the Health Department within 7 days:
1. Copy of service invoice for mop sink

  • Certified Food Manager/Certificate Process
    Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
    Correction: Please obtain a CFM card within 30 days. Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided). A copy of the photo identification card can be faxed to the food safety section at (703) 653-9448. Failure to provide a copy of the photo identification card may result in further enforcement action.
  • Plumbing / Maintained in Good Repair
    Observation: Plumbing connections under the MOP SINK piping are leaking.
    Correction: PLEASE HAVE MOP SINK REPAIRED WITHIN 7 DAYS. PLEASE SEND COPY OF SERVICE INVOICE TO HEALTH DEPARTMENT. A plumbing system shall be maintained in good repair.

The purpose of today's visit was to conduct a risk factor assessment. Suggestions have been made to encourage all employees who have passed a ServSafe exam to obtain a valid Certified Food Manager (CFM) card prior to next inspection. Please continue the following safe food handling practices:
1. Annual training on employee health policy for long-term employees
2. Thawing, hot holding, and cold holding guidelines with pictorial instructions
3. Maintaining food temperature logs.

    Correction: Replace gaskets on Delfield 1dr UC. Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.

    Observation: Water from the handwashing sinks (ALL SINKS) was measured at a temperature less than 100°F.
    Correction: A handwashing sink shall be equipped to provide water at a temperature of at least 100°F through a mixing valve or combination faucet.
