This visit was made to conduct a routine food safety evaluation. The Person in Charge was very helpful.
- The Person in Charge had a taken the food safety exam at ORS Interactive but has not obtained their Northern Virginia Certified Food Protection Manager's card. Please obtain this card and fax it to 703 746 4919 or e-mail it to eric.spring@vdh.virginia.gov
Note:
- They are using the kitchen in the church basement to prepare fresh squeezed orange juice and package mozzarella cheese for sale at farmers market on Saturday. No active preparation was taking place at the time of the visit as they had already finished squeezing juice and packaging the cheese.
- They brought their own sanitizer and hand soap. Thank you
- All bottles for orange juice are single use and they place a sticker on them stating that the juice is not pasteurized.

This visit was made to conduct a routine food safety evaluation at the Old Town Farmers' Market.
There was no hand washing station or 3 comp sink set-up while Mr. Clemente was operating. He was able to set up both properly during the inspection.
The hand washing station must be set up and used during all hours of operation. Hands must be washed when switching tasks (money to food prep), before putting on new gloves to begin a task, when hands become soiled, when hands are contaminated, and after eating, drinking, coughing, sneezing, or using the bathroom.
Great cold hold temps.

  • Critical: Handwashing / When to wash hands (corrected on site)
    Observation: A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils, or after engaging in any activity that could contaminate the hands. (Mr. Clemente did not have a hand washing station set up at the market while he had been preparing and handling food)
    Correction: ALL food employees shall be washing their hands OFTEN especially after handling trash, using the restroom, handling raw meats, handling soiled equipment and utensils, BEFORE putting on clean gloves, etc. Proper handwashing frequencies will aid in the reduction foodborne illness. (Mr. Clemente set up hand washing station and washed his hands upon request)
  • Critical: Food-Contact Surface Sanitized before Use after Cleaning (corrected on site)
    Observation: The food-contact surfaces of the following equipment were not observed sanitized: utensils. (there was no 3 comp sink set-up at the market)
    Correction: After cleaning and rinsing food-contact surfaces and utensils, they shall be effectively sanitized before coming in contact with food and before use. (PIC set up the 3 comp sink with Cl sanitizer solution at 50 ppm)
  • Handwashing Sinks / Numbers By Law (corrected on site)
    Observation: There is not an adequate number of handwashing sinks lavatories on site. (See 5-204.11A). (There was not a hand washing station set up at the market.
    Correction: At least one hand washing sink, a number of hand washing sinks necessary for their convenient use by employees in areas specified under 5-204.11 and not fewer than the number of hand washing sinks required by Law shall be provided. (PIC provided a hand washing station)
