Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of food from an unlabeled container could result in chemical poisoning.

Correction: Do not re-use milk jugs for water storage. Use bottled water or water from an approved source.

Observation: No container for gray water at mobile unit. Observed valve open allowing gray water to spill onto the surface of the ground.
Correction: Need container to catch gray water so that it can be disposed of properly. Keep valve closed until a container is available.

Observation: Screening at back door not adequate to keep out pests.
Correction: Replace or repair screening so that it stays closed and does not allow pest into facility.

Observation: Reheating chili (65 degrees F) in small crockpot.
Correction: Reheat commercial chili rapidly to 135 degrees F before placing it in crockpot then hold at 135 degrees F. If chili is left over, cooled and reheated, reheat to 165 degrees F then hold at 135 degrees F.

Observation: Thermometer in reach in refrigerator broken.
Correction: Replace as needed. Also have food thermometer available to check food temperatures.

Observation: Top of reach in, fan and front of hood system appears to have grease and soil accumulation.
Correction: Clean as needed.

Observation: Waste water from mobile unit not being disposed of in approved sewage disposal system. (owners home septic system)
Correction: Obtain approved system and submit letter regarding permission to dump.

Observation: Screening for back door is ripped and doesn't close adequately to prevent the entrance of pests/insects.
Correction: Repair and replace screening.

Correction: Remove any unnecessary items and store personal items in a designated area.
