This visit was conducted to do a Risk Factor inspection. Discussed health policy with manager. Risk factor decision tree laminated and posted in visible location to be easily seen and read by employees. Items date marked in walk in cooler - date dots. Recommend that date dots be put on food items/containers as soon as they are placed to cool. Manager practicing active managerial control in the following manner: - has written and posted cooling and cold holding policy for sliced tomatoes - a temperature log is kept for both cold and hot holding units and products kept in these units. Cooked temperature for food items are also logged,. Temperature is logged twice daily and logs are kept for about a week. Facility is very clean and well organized. All raw products are fully cooked.
