The purpose of this visit was to conduct a risk factor assessment. Provided copy of consumer advisory fact sheet. The following good retail practice was discussed during the inspection: provide air gap between bottom of hoses and flood rim level of 3 vat sink or provide approved backflow preventers on both sides of splitter valve supplying hoses. NOTE: Please remember to provide copy of revised menu to Health Dept. within 10 days.
- Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: mashed potatoes in flattop cooler kitchen.
Correction: Potentially hazardous foods (time/temperature conrol for safety food) shall be held cold at a temperature of 41°F or below. NOTE: Discussed wiht PIC. Mashed potatoes had been set on counter immediately prior to inspection while cooler shelves were organized. Potatoes determined to be out of temperature less than one hour and were returned to the cooler.
- Critical: Consumer Advisory Required for Raw or Undercooked Animal Food
Observation: A review of the menu with the foodservice operator indicates that there is no consumer advisory for the following food item(s) that may be served raw and/or undercooked: hamburgers.
Correction: If an animal food such as beef, eggs, fish, lamb, milk, pork, poultry, or shellfish is served or sold raw or undercooked the permit holder shall inform consumers of the significantly increased risk of consuming such foods by way of a disclosure and reminder using brochures, deli case or menu advisories, label statements, table tents, placards, or other effective written means. NOTE: Add a disclosure asterisk next to all beef burgers on menu that are offered raw or undercooked. Also add statement to existing consumer advisory warning on menu stating that the foods with an asterisk are cooked to order, offered raw or undercooked, or simililar disclosure statement.
- Critical: Sanitizer / Alternate Solution / Approval
Observation: The operator is using a sanitizer that is not chlorine, iodine, or quaternary ammonium compound, and has no documentation on site that indicates the product is approved for use and has no documentation on how to use the product. Wipes used for contact surface contain dimethyl ethylbenzyk ammonium chloride and are labled not for use on food contact surface.
Correction: If another solution of a chemical is used the permit holder shall demonstrate to the Health Department that the solution achieves sanitization and the use of the solution shall be approved. NOTE: PIC advised wipes would only be used for nonfood contact surfaces in the future, and approved quaternary ammonium santizer used in three vat sink would be used to fill wiping cloth buckets.
