The purpose of today's visit was to conduct a risk factor assessment. Please continue to train employees on safe food handling practices as this was observed even throughout lunch rush. Please continue to promote Active Managerial Control by 1) training employees to take reheating, hot holding, and cold holding temperatures regularly throughout their shifts, 2) training employees to create and monitor concentration of sanitizing solution, and 3) regularly review of employee health policy with long-term employees. The purpose of today's visit was to conduct a follow-up inspection in order to observe cold holding capabilities of MasterBilt walk-in cooler (WIC). WIC is now able to maintain an equipment temperature of 41F or below. Please resume full use of WIC to store potentially hazardous foods (PHFs). Cold holding potentially hazardous foods at 41F or below limits potential bacterial growth on items which decreases the risk of food-borne illness.

The purpose of today's visit was to conduct a routine assessment. Please continue to train, educate, and test your employees quarterly on your employee health policy. This allows for better retention of information, as well as gauges their understanding of how to personally prevent food-borne illness transmission. EHS provided employee illness decision guide. Please send invoice of service for Masterbilt Walk-in cooler within 5 days. A follow-up inspection will be conducted on February 16th, 2015. I look forward to your next assessment.
