Critical: Hands - Preventing Contamination from Hands* (corrected on site) Observation: Employee observed handling ready-to-eat (RTE) foods (muffins and scones) with their bare hands.
Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site) Observation: Tray of individual mini-quiches in the refrigeration unit were not properly dated for disposition.
Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. Temperature Measuring Devices Observation: There was no temperature measuring device located in the Whitlpool homestyle refrigerator
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature. Correct within 10 days
Sanitizing Solutions, Testing Devices Observation: PIC could not locate test kits to measure sanitizers: chlorine for wiping cloths and quat. ammonia for dishes
Correction: Obtain two test kitsso that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Dish machine out of order- use of 3 compartment sink had been implemented prior to inspection. Please FAX service report for dish machine to health department with wash & rinse temperatures documented when put back in use. Monitor temperature of Edgestar refrigerator-do not put back in use until a temperature of 41F or below is maintained.

Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
Temperature Measuring Devices - Ambient Air and Water (corrected on site) Observation: No ambient (air/water) temperature measuring device (degrees F) located in the Edgestar counter refrigerator.
Correction: Provide a temperature measuring device that is accurate within +/- 3 degrees Fahrenheit in the intended range of use.
