The purpose of today's visit was to conduct a routine assessment. Please be advised to monitor temperatures of items being hot/cold held at serving line to ensure proper temperatures are being maintained. Suggestions made to discontinue the practice of double panning items at serving line so hot holding items can be maintained at 135F or above. Some items at serving line (i.e., chicken sandwich, pizza) are being held on trays above hot holding pans. Please place items in pans and below fill lines to properly hot hold and limit potential bacterial growth. Also, frozen pizza is being heated in oven then transferred to hot holding cabinet. Advised to heat pizza in oven longer to achieve reheat temperatures of 135F or higher prior to placing in hot holding cabinet.
