This visit was made to conduct a routine food safety evaluation. The Person in Charge was very helpful during the visit. The following issue requires attention: 1. Please ensure that Time/Temperature Control for Safety foods (TCS foods) are kept cold at 41 °F or hot at 135°F or above. TCS foods shall be properly cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F within a total of 6 hours to prevent the growth of harmful bacteria. Note: - This food establishment vaccum packages (ROP - reduced oxygen packaging) marinated raw meats as well as cooked chili that has been cooled first. Please note that all Reduced Oxygen Packaging food items are to be marked with product name and date packaged and can not remain in package for more then 48 hours (except when frozen). - The dishwashing machine needs to run for a few cycles before it can reach high temperatures for sanitization. Please ensure food employees are running the machine for a few cycles before sanitizing the dishes - A number of corrections were made to the kitchen since the last pre-opening inspection. This visit was made to conduct a pre-opening change of ownership inspection. All equipment temperatures were at 41 ° F or below. The following items will need repair: 1. Ceiling tiles are rusted above the warewashing machine 2. Observed cracks and holes in the wall at various places in the kitchen 3. Ceiling tiles are missing in dry storage area 4. Light shields are missing in walk in refrigerator 5. The two sinks at the cookline are not plumbed correctly and are leaking water onto the floor. 6. The door on the True Walk in Refrigerator does not fully close 7. The drainage lines at the prep sink and in the bakery are not indirectly plumbed correctly 8. Floor tiles are missing under prep sink and coving needs repair in the employee cafeteria. Note: Hot water provided by boilers from main hotel. No hot water calculation provided. Recommend issuance of health department permit. This report shall serve as your permit to operate until your official permit is received. Any changes to floor plan, equipment, or menu/special processes, shall be pre-approved by the Alexandria Health Department. No violation noted during this evaluation. | 08/06/2015 | Pre-Opening |
