- Cooling Methods (corrected on site)
Observation: Food containers for cooling food are arranged so as not allow for maximum heat transfer. Potato wedges staged and placed in speed rack in walk-in refrigerator. Speed racks were covered with plastic which does not allow for proper air flow. Wedges on one of the speed racks were 54 F and could not properly cool back down to 41 F or below because of plastic cover.
Correction: Arrange the food containers in the refrigeration equipment to provide maximum heat transfer through the container walls. Loosely cover or uncover the food if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. Plastic cover removed during inspection.
- Critical: Time as a Public Health Control* (corrected on site)
Observation: Chicken nuggets for which time rather than temperature is being used as a control was not labeled or otherwise marked with a 4 hour cook, serve or discard by time. Temperature is being recorded for reheated food items but no time is being recorded.
Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control. Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time. Chicken nuggets will be used within 4 hours of reheating time.
- Toilet Rooms - Enclosed
Observation: Toilet room door is not provided with a self-closing door
Correction: Provide a self-closer for the toilet room door. Completely enclosed toilet facilities minimize the potential for the spread of disease by the movement of flies and other insects between the toilet facility and food preparation areas.

Observation: Condenser line in walk in freezer/leaking was observed in a condition that prevents necessary maintenance and easy cleaning.
Correction: Repair the condenser line to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the condenser line, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
