11/19/15: PIC (Chiquita) reports dishmachine is repaired and operating properly.
  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures
    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 180ºF. The thermometer read 156ºF.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.

    Observation: Sliced cheeses not discarded within 7 day period.
    Correction: Discard the foods within 7 days from the date opened. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: The temperature measuring device for the (wash/rinse/sanitizing) tank of the warewashing machine is not operating properly.
    Correction: Electrician serviced unit on 2/22/13 and found no problem with unit. States they were not letting booster tank empty before running again.
