    Observation: Employees observed working in the food service area without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.   • Food Storage Containers; Identified with Common Name of Food (repeated violation)
    Observation: Unlabeled food containers.(Squeeze Bottles)
    Correction: Label working containers with the common name of its contents. Food containers shall be labeled in a language that is understood by the regulatory authority and by the employee. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.
  • Nonfood Contact Surfaces
    Observation: The nonfood contact surface of the Beverage Air Sautee lowboy cooler door gaskets are not clean.
    Correction: Clean door gaskets free of mold and food particles/debris..

    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.(Chlorine test strips/QAC on site-using bleech as sanitizing method/chemical).
    Correction: Obtain a Chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

    Observation: Standup Kenmore Freezer in dry storage shed was observed in a state of repair and condition that prevents necessary maintenance and easy cleaning.(Ice/Frost buildup in interior of freezer)
    Correction: Repair/Adjust the equipment to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair/adjust the freezer, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Physical Facilities in Good Repair
    Observation: Hood fire caulking is not maintained in good repair. (Cracking/coming apart at junction connection).
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities and safety.

Note:Maintain temperature logs on all refrigeration units daily.No food being prepared during inspection.Thirty day inspection,Operation Hours are currently W-Sat 10-2 pm. Future Hours are W-Sunday 8-3 pm. Permit and CFM Certificate posted.Outside area clean.Restroom clean and dry storage area OK.

Follow up to check on ceiling material in kitchen. Material is cut sealed bamboo wood which is used as a dropped ceiling. Is smooth and washable. Bianca was preparing food without wearing a head covering and without having a valid food handlers card. Gave her until Monday to obtain card. Permit and CFM certificate need to be posted for public display. Pet bed observed in dining room. No animals allowed in establishment except for service pets.
No violation noted during this evaluation.
