    Correction: Food shall be protected from contamination by storing the food at least 6 inches off the floor on approved shelving units or dunnage racks. Milk crates, soda crates, or bread racks are not suitable for food storage.
  • Nonfood-Contact Surfaces Clean at Frequency to Preclude Accumulation
    Observation: The nonfood contact surface of the interior of the cabinets had accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: The following food item(s) were measured at improper temperatures: the sausage on the breakfast buffet were 123°F. Discard the sausage.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be hot held at a temperature of 135°F or above.

    Observation: Observed that the floors in the kitchen and dry storage ares in need of cleaning.

    Observation: Observed that poisonous and toxic materials are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items. Pledge (cleaner) is improperly stored with food in the dry storage area. Please relocated the cleaner with other toxic products.
    Correction: All poisonous and toxic materials shall be stored to prevent contamination of food, equipment, utensils, linens, and single service items by separating the poisonous and toxic materials by spacing or partitioning.

    Observation: Observed that the employee's bottled water was in the reach-in refrigerator and is not located to protect food from contamination. Employee's bottled water was removed from the refrigerator.
    Correction: Relocate the area designated to accommodate employees' personal needs to prevent the potential contamination of food, food equipment and utensils, linens, or single-service items.

This visit was made to conduct a routine evaluation. The following items require attention:
1) Monitor chlorine sanitizer concentration in 3 compartment sink to ensure that dishes are properly sanitized. Chlorine concentration should be 50-100 ppm.
2) Store all food items at least 6" off of the floor.

    Observation: Food stored on the floor and/or food stored less than 6 inches off the floor. (Observed produce (oranges and pears) on floor in storage room).
    Correction: Food shall be protected from contamination by storing the food at least 6 inches off the floor on approved shelving units or dunnage racks. Milk crates, soda crates, or bread racks are not suitable for food storage.
  • Critical: Food-Contact Surface Sanitized before Use after Cleaning (corrected on site)
    Observation: The food-contact surfaces of the following equipment were not observed sanitized: utensils and pans. (Chlorine sanitizer solution was 0 ppm at 3 compartment sink. Was corrected to 100 ppm during inspection.)
    Correction: In conjunction with Section 4-703.11, the food-contact surfaces of equipment and utensils shall be sanitized before use and after cleaning.

This visit was conducted to complete a routine food safety evaluation.
1. The kitchen area was tidy, and team members knowledgeable on reheating procedures and employee health. The site does not handle any raw animal foods.
2. Please ensure that there is a hand washing reminder notice by each hand washing sink used by your kitchen team.
