Temperatures recorded on veggie side show that unit has also been above temperature since Saturday. Per manager, a/c unit on that side of store is not working since Saturday.

    Observation: Foods on line for which time rather than temperature is being used as a control was not labeled or otherwise marked with a 4 hour discard by time. No times recorded to show foods are being no longer than 4 hours. No waste log available.
    Correction: Discard food that is not served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control. Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time.

Unit has not been serviced. Owner contacted serviceman but he has not been. Was supposed to come Monday & didn't. Discussed labeling items with the time put on line so items can be discarded if not used in 4 hours. Unit needs to be serviced immediately. Contact Health Dept. when serviceman checks unit.
