Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: shelving unit next to grill and trash can
Correction: Maintain nonfood-contact surfaces of equipment clean.

Observation: Several bulbs in prep area are missing shields.
Correction: Shield all bulbs in food prep areas.

Observation: Floors under grill area have accumulation of food and grease.
Correction: Clean as needed.

Observation: Containers observed on counter covered and stacked for cooling.
Correction: Cool foods properly using the 2 stage cooling method. Cool from 135 degrees F to 70 degrees F within 2 hours then from 70 degrees F to 41 degrees F within 4 hours. Do not cover or stack. Cooling informational handout left with operator.

Observation: Some shields over light bulbs missing in food preparation area.
Correction: Shield lights as needed.
- Distressed Merchandise, Segregation and Location
Observation: Dented cans on storage shelves.
Correction: Move dented cans to another area so they will not be used and returned to vendor for replacement or credit.

Observation: Floors under fryers need cleaning. Walls, ceilings and lights have dust accumulation.
Correction: Clean floors under equipment as needed. Dust areas as needed.
