This Risk Factor Assessment occurred during lunch service
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Hummus (46 F), Yogurt (45 F) in the McCall two door upright refrigerator.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below. During lunch service, this unit was observed opened frequently to remove foods for service. TCS foods holding in the unit were relocated to the adjacent freezer for rapid cooling. CFM agreed to monitor refrigerator temperature, and to discontinue use and have unit serviced if it does not return to 41F or colder in an acceptable time. Temperature logs maintained for the unit indicate it typically maintains ambient temperatures of around 34 F.
