    Observation: Chili from 7-18-2013 (55,69F) and pork loin from 7-18-2013 (47-48F) appear to not be adequately cooled to prevent the growth of harmful bacteria.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.

    Observation: Melon(46F),turkey breast(49F) are stored in a cold holding, reach-in uni(41F) at improper temperatures-discarded. Turkey breast(45F),ham(44F),cheese(44F),melon(47F) and tomatoes(47F) are stored in walk-in uni(46F) at improper temperatures. Service contractor is intervening. Food will be relocated within an hour if unit is not capable of maintaining 41 F or below.
    Correction: Relocate food if in danger zone less than 4 hours.Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
