FINAL INSPECTION ON RENOVATIONS - ADDITION OF NEW EQUIPMENT
SCOPE OF WORK:
Installation of the following new equipment: pizza refrigerator, work-top refrigerator, griddle, fryer, mobile filter system, salamander, char-broiler, 2 convection ovens, work-top freezer, dressing station and heat-shield.
Equipment for future installation: prep table, smoker, table-top soup warmer, roll-in refrigerator, utility table and 2 utility shelves. Owner shall contact the Health Department for inspection when these future equipment installation are completed.
*Approval on the above stated renovations (new equipment) is hereby granted by the Fairfax County Health Department.

    Observation: Openings to the exterior of the building are present along the back door to the dumpster room.
    Correction: Fill or close holes and other gaps along floors, walls, and ceilings to protect against the entry of insects and rodents. Install a weather stripping at the base of this door.
  • Lighting Intensity/ Food Prep Area / 50 foot candles
    Observation: Observed that inadequate lighting was provided in the food preparation areas.Two light bulbs under the hood were burned out.
    Correction: Increase the lighting to provide a minimum of 50 foot candles in all food preparation areas.Replace the burned out bulbs to provide proper lighting.

Observed facility very clean and organized. Several CFMS who are knowledgeable about food safety.

1. Obtain a vegetable wash test kit.
2. Fax a copy of the repair for the Traulsen upright 1 door cold holding refrigerator in the side room of the kitchen within 48 hours.

During inspection maintenance was onsite replacing fuses, but unit was not in use).
