The purpose of this visit was to perform a routine inspection.
Please email me a picture of the handsink, moved from the right side of the 3-vat sink, presently where it is blocked by a prep refrigerator, to the left side of the 3-vat sink within 2 weeks.
Additionally information with left with the CFM on allowing dogs on the enclosed patio of the restaurant.
  • Wiping Cloths/Use Limitation/Wet Towel Storage
    Observation: Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.
    Correction: Wet wiping cloths are to be used for wiping counters and other equipment surfaces and are to be held in a chemical sanitizer solution at the appropriate concentration between uses.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food items were observed cold holding at improper temperatures using a calibrated food temperature measuring device:Half and half at 54F, skim milk at 45F, whole milk at 52F, yoghurt pudding at 57F in the display case
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth.DISCARDED
  • Sanitizer Test Kit Required (repeated violation)
    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a quaternary ammonia test kit.
  • Handwashing Sink / Accessible at All Times
    Observation: The handwashing facility located adjacent to the 3-vat sink is blocked by the presence of a prep refrigerator preventing access by employees for easy handwashing.
    Correction: A hand washing sink shall be maintained so that it is accessible at all times for employee use.

    Correction: Obtain a QUATERNARY AMMONIA test kit.
  • Critical: Food-Contact Surfaces Cleaned Any Time after Contamination (corrected on site)
    Observation: Equipment food-contact surfaces/utensils were not observed cleaned before any possible contamination: expresso machine
    Correction: Equipment food-contact surfaces and utensils shall be cleaned at any time during the operation when contamination may have occurred. discussed with CFM and set up sanitizer bucket
  • Clean Ice Bins, Beverage Dispenser Nozzles, Etc. per Manufacturer Specs.
    Observation: Surfaces of ice bins, beverage dispensing nozzles, and enclosed components of equipment are not being cleaned as required.
    Correction: Surfaces of utensils and equipment contacting food that is NOT potentially hazardous (time/temperature control for safety food) such as ice bins, beverage dispensing nozzles, and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment at a frequency specified by the manufacturer or at a frequency necessary to preclude accumulation of soil or mold.
  • Nonfood-Contact Surfaces Clean at Frequency to Preclude Accumulation
    Observation: The nonfood-contact surfaces of the following equipment had accumulations of grime and debris: gaskets at beverage air 2dr cooler by dump sink
    Correction: Nonfood-contact surfaces of equipment and utensils shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

The Health Department has been notified that settlement on a change of ownership will occur on July 31, 2014. This inspection was conducted to facilitate the issuance of a Health Department Permit to Operate during the change of ownership at this establishment. At the time of this inspection, the establishment is in compliance with Chapter 43.1, Fairfax County Food Code. The current permit is not transferable. In order for a Permit to Operate to be issued after settlement, please contact Ron Campbell, Environmental Health Specialist III, at 703-246-8427. A first routine inspection will be conducted approximately 30 days after the Permit to Operate is issued. All outstanding violations from this pre-opening inspection must be corrected by the time of the first routine inspection.
Note the following recommendations:
It is recommended that more than one person on staff be a Certified Food Manager. A Certified Food Manager must be on the premises during ALL food preparation and service.
There is no hood exhaust system. There is no food preparation being done in the establishment. There is no grease trap. The menu consists of coffee, tea and baked goods.
It is recommended that a monthly pest control program be implemented. Maintain records of pest control treatments for Health Department review.
Water heater: SAGH CG32-75T-125-5N
  • Mechanical Warewashing Equipment, Hot Water Sanitize, Final Rinse Temp
    Observation: The observed water temperature at the high temperature dishwasher was less than 165F for wash and less than 180F for rinse.
    Correction: Service the machine to meet minimum manufacturer's specifications. Fax or email a copy of the service report to the health department within 48 hours, prior to settlement.
