CFM is commendably knowledgeable in food safety practices and eagerly implements suggestions to improve safety. The following active managerial controls of food safety are effectively exercised in this facility: * All managers and food employees are trained and function as Full or Limited Certified Food Managers. Employees are knowledgeable, and perform tasks safely. * Standard operating procedures include making and testing sanitizer solutions on schedule. * Exemplary date marking procedures are used to ensure food safety while in storage. * CFM instructs and oversees proper cooling methods * Establishment and verification of safe food storage. All foods in storage are well protected from contamination, including many double wrapped foods. Active managerial controls are evident in this facility. Multiple employees are CFMs, and clearly knowledgeable and active in ensuring food safety. PIC was observed training an employee in proper food storage in refrigerated prep tops. EHS and CFM discussed advantages and disadvantages of switching from QA tablets to chlorine for sanitizing solutions. Facility shares an outdoor waste disposal area with several other facilities. The dumpster lids are severely damaged from a fire. Please be aware that food facilities are required by Law to maintain garbage facilities covered, and in good repair. Properly covered dumpsters also deter pest infestations.
