  • Refuse Areas / Enclosures / Receptacles / Good Repair
    Observation: The waste storage dumpster outside has a missing lid exposing trash and garbage to outside elements and attracting vectors to the area.
    Correction: Storage areas, enclosures, and receptacles for refuse, recyclables, and returnables shall be maintained in good repair. DISCUSSED WITH THE CFM THE IMPORTANCE OF HAVING A COVERED DUMPSTER AND TO ENSURE THAT THE LID IS REPLACED AND BOTH LIDS ARE SECURE AT ALL TIMES.

    Observation: Outside refuse container was uncovered.
    Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids or doors if kept outside the food establishment.

    Observation: There is no covered refuse container for the disposal of feminine napkins in the ladies room stall.
    Correction: A toilet room used by females shall be provided with a covered receptacle for sanitary napkins.

The purpose of this visit was to conduct a routine risk inspection. Water heater: hot water provided by boiler that provides hot water to the entire school facility. EHS discussed importance of maintaining cold hold items on serving lines at proper temperatures, and methods for maintaining proper temperature. Serving line to right not in use at the time of the inspection.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Grated cheese on salad on SL left.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. PIC removed salad and replaced with new salad from cooler at 41 degrees F. Original salad, which had been removed from cooler approx. 10 minutes, was reduced to 41 degrees F within 45 minutes of return to cooler.
