Discussed cooling of gizzards. Gizzards found in walk-in at 95 degrees after about one hour. Gizzards were about 4" deep and covered with plastic wrap with air slits. This to cool to 70 degrees in one more hour. Manager transferred to several pans and placed on top shelf in walk-in. Recheck temperatures in one more hour. Always verify your processes by using your thermometer. Kitchen is very clean. Don't forget lid and straw for personal drinks. Do not reuse food tubs for secondary food storage. 100 ppm at 3 compartment.

    Observation: Found a deep pan of cooked gizzards in walk-in at 98 degrees. These are intended to be served tonight.
    Correction: You must cool quickly to 70 degrees in 2 hours then to 41 degrees in 4 more hours. Take steps to cool quickly by placing on a flat pan. Workers relocated to a shallow pan.

Note: if water heater does not work you jeopardize the operation of your restaurant. You must have hot water. Owner called plumber during my visit. New gas fryers have been installed. A drive thru window is planned. Consider a self closing window to deter flies - owner had idea about a fan blowing outward. This is a good idea. Permit issued.
