    Observation: Observed boxes of food and a crate of bread stored on the floor or food stored less than 6" above the floor in the dry storage area.;Elevate food storage onto approved shelving with minimum 6" legs or casters or one empty bread crate between the floor and the food.

Note: Installed a new dish machine at the start of school. The required minimum rinse temperature is 180°F according to the dish machine's data plate. The distributor was called to come out and check the thermometer and the top flap on the unit to see if the thermometer needs adjusting since the plate temperature is reading okay.
Plate Temperature 160°F - Okay
  • Cloths - Wiping Cloths - Use Limitation
    Observation: Wiping cloths improperly stored between use.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.

    Observation: Food stored on the floor or food stored less than 6" above the floor. Loaves of bread stored in bread rack directly on floor.;Elevate food storage onto approved shelving with minimum 6" legs or casters. Can also put one empty bread rack on the floor and stack rest of full bread racks on top of empty.
  • Plumbing System Maintained in Good Repair
    Observation: Hose on wall above 2-compartment sink does not have restraint attached to keep nozzle from falling below flood line of sinks.
    Correction: Need to install restraint spring or other device to keep nozzle of hose from falling below flood level of sinks when in storage or install double check valve with atmospheric vent in hose (presently only have single-check valve). If not corrected this will be counted as a critical violation.
