| Milk delivery was received during inspection and manager did check temperatures. Salads with chicken that are stored under refrigeration do appear to be cooling to 41 F or less, but temperatures are not maintained once out on the serving line. Suggest 'blast chilling' the salads w/ chicken or sliced tomato and sandwiches in the freezer for a short time bring down temperatures quickly after preparation. Suggest drilling holes in the bottom of the ice scoop holder to allow water to drain. Very clean and organized kitchen.
