The purpose of this visit is to conduct a routine inspection. Manager has a letter of parasite destruction on site for the salmon which in full compliance at the time of this inspection. Visited site, discussed complaint with CFM. Observed all food handling processes for bagels and cream cheese. Observed proper food handling and storage of food items during inspection. Bagels are kept in front display bins for 4 hours maximum and are heated to order. Cream cheese is kept in front 2DR Prep cooler in original containers until finished. Cream cheese is used before end of day and constantly replaced. EHS advised that prep top cover be closed during non-busy hours. Routine pest control visits are conducted monthly by Dodson Bros Pest control. Observed past 3 months of pest control invoices with no pest activity reported. Facility clean and organized with regular routine cleaning procedures. No violations observed, at this time the complaint is not confirmed. The purpose of this visit is to conduct a complaint inspection. The manager was not aware of the complaint. The establishment has an internal HACCP system in place and showed records of temperatures taken for the turkey chili on the day the complainant was there. The turkey chili is a precooked product that requires a reheating procedure prior to being served. The turkey chili is brought in frozen then placed in walk in cooler to thaw. The products are date marked. The reheating procedure consists on heating the product in the microwave in the 2-4 cycle then stirring. The temperature must reach 175 before it is placed in the steam well. The product will be refilled as necessary throughout the day, however at the end of the day any remaining product is discarded.
