    Observation: The following food items were found hot holding at improper temperatures using a calibrated food temperature measuring device:Observed refried beans at 122F, 110F in the FWE hot holding cabinet
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be hot held at a temperature of 135°F or above unless the permit holder is using "time as public health control" as specified under 3-501.19. DISCARDED

Note:
The 3-vat sink is not air gapped at the sanitize sink and also does not exhibit an air break at the wash and rinse basins. Upon renovation of the cafeteria/school please ensure that air breaks/air gaps are installed on the 3-vat sink.

  • Ventilation Hood System / Drip Prevention
    Observation: Observed the filters installed in the hood with the grease baffles horizontally instead of vertically.DISCUSSED WITH THE PIC TO TAKE THE FILTERS OUT AND PUT THEM IN WITH THE GREASE BAFFLES VERTICALLY TO REMOVE THE GREASE INTO THE GREASE COLLECTION PAN BELOW.
    Correction: Exhaust ventilation hood systems in food preparation and warewashing areas including components such as hoods, fans, guards, and ducting shall be designed to prevent grease or condensation from draining or dripping onto food, equipment, utensils, linens, and single service items.
  • Refuse / Cover Receptacles / Outdoors / Tight-Fitting Lids
    Observation: Outside refuse container was uncovered.
    Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids or doors if kept outside the food establishment.
