This visit was made to conduct a routine food safety evaluation. The Person in Charge was very helpful throughout the visit. The following issues require attention:
1. Time/temperature control for safety foods must be kept at 41°F or below. As discussed, please relocate the cut watermelon, tofu and sprouts in the produce open display unit to the colder part of the unit to maintain temperatures of 41°F or below.

-Please replace lights in the freezer units that are not working

  • Package Integrity & No Dented Cans/ Specifications for Receiving (corrected on site)
    Observation: The following food item(s) from damaged packaging were found offered for sale or service: Observed dented cans of collard greens and spaghetti sauce.
    Correction: Food packages such as canned goods shall be in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. Return all dented and damaged canned goods to your food supplier for a credit. Person in Charge will remove from shelves for sale.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were measured at improper temperatures: cut watermelon, bagged sprouts and tofu in the open display case were measured at 45°F.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below. Discussed issue with Person in Charge and she will reorganize the food products in the open display case to locate the above mentioned items into the colder part of the unit.
09/11/2015Routine
This visit was made to conduct a complaint investigation for complaint made on 2/12/15. Tubs of lard brand "Puerquito de Oro" are not properly sealed by commercial company who is delivering it, food is subject to adulteration. Manager will contact vendor and ask that they seal the product properly. Moldy peanuts were not found at the time of inspection, however, sunflower seeds were observed to have some insects (moth) inside packaging. Manager was asked to train staff on how to better sort through these products and refuse products if they notice that there are any eggs/larvae/ insects or if food is spoiled. There were no expired yogurts in the dairy case at the time of inspection. Tortillas in the refrigerated cases are dated by the supplier for quality, some products in fact did not have dates but are not required. Freezer case was in deed of being defrosted and cleaned out, the gaskets for this whole case need to be repaired or replaced. Spoke with manager and staff regarding dry labing for the temperature logs used for refrigeration units. At time of inspection (before 1 pm) time 1 pm slot was already filled in with a temperature reading for all units. Please ensure that temperatures are being accurately monitored and properly recorded.

02/13/2015Complaint
This visit was made to conduct a complaint investigation for a complaint made on 2/3/15. Upon inspection there was no sugar cane on display. Manager stated that they do not place it directly on floor and may have been knocked down. Boxes of items had just arrived at the produce department and were being stocked on shelves. The store does not have a bakery department and does not prepare anything in house. All baked goods and tortillas come from commercial supplier and most have dates diplayed for quality. In the meat department food grade bags are being used to package meat, I would recommend that the store also use paper to wrap meats in to secure against leakage. Lard was not exposed during inspection. We do not regulate "food service" packets of salt and whether they are being sold by the store. The complaint is invalid at this time.

    Observation: Observed food employees using improper handwashing procedures (employee did not wash with soap for a full 20 sec. and did not use paper towel to turn off faucet after washing hands)
    Correction: ALL food employees shall wash their hands in the following manner: 1) remove and discard used gloves, 2) turn on warm water at the hand sink, 3) rinse hands/arms with warm water, 4) lather hands/arms with soap and scrub for at least 20 seconds, 5) rinse hands/arms with warm water, and 6) dry hands/arms with paper towels and then turn off the water at the hand sink using the paper towel. Effective handwashing will aid in the reduction of foodborne illness and is an important part of the food employee training program.
  • Hand Drying Provision / Individual, Disposable Towels (corrected on site) (repeated violation)
    Observation: Observed that paper towels were not provided at each handwashing sink (no paper at handsink in produce area)
    Correction: Provide paper towels at each hand sink to allow employees to properly dry their hands after handwashing.
  • Cleaning Frequency for Physical Facilities (repeated violation)
    Observation: Observed that the floor in produce area and floor of produce walk in is in need of cleaning (accumulation of water on floor)
    Correction: Clean the physical facilities at a frequency necessary to ensure the protection and safe preparation of food.
