The purpose of today's visit was to conduct a risk factor assessment. The only violation noted was inadequate records for Time as a Public Health Control for the cooked french fries. The manager and I agreed that the best way to track that cooked french fries do not remain in the temperature danger zone for over two two hours (Five Guys policy- the Health Department allows 4 hours) is for each bucket of fries placed near the fryer to be marked with the time it was put out and a discard time. All cooked fries come from the one bucket and will be discarded after 2 hours if not sold.
  • Critical: Time as a Public Health Control/ Up to 4 Hours for Cold & Hot PHF(TCS) / Requirements (corrected on site)
    Observation: The french fries for which time rather than temperature is used as a control is not marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. Five Guys food safety practices require discard of cooked french fries every two hours, however the french fries are not labeled with a cook time and therefore it is not possible to determine when 2 hours has passed for a specific batch of fries.
    Correction: If time only, rather than time in accordance with temperature control, up to a maximum of 4 hours, is used as the public health control the food shall: 1) have an initial temperature of 41°F or less if removed from cold holding temperature OR 135°F or above if removed from hot holding temperature control, 2) be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control, 3) be cooked and served, served if ready-to-eat, or discarded within 4 hours from the point in time when the food is removed from temperature control, and 4) be discarded if unmarked or marked to exceed a 4 hour limit. NOTE: The bucket of fries from which french fries are removed and cooked has been labeled with the time it was placed near the fryer. Only one bucket is used at a time and therefore all cooked french fries are from that bucket. Fries will be sold or discarded within 2 hours (Five Guys policy) of the bucket being placed into use.

The purpose of this visit is to conduct a routine inspection. Employee Health Policy in place. Sanitizer observed within acceptable limits. Facility has test kit. Observed 4 employees washing hands using proper technique during today's visit. Manager provided written instructions for Time as a public health control for par cooked french fires during inspection today. Manager exhibited Active managerial control by monitoring handwashing. She was aware of the employee health policy. EHS provided Active managerial control program information to manager today. Thank you. If you have any questions, please contact the health department.

The purpose of today's visit was to conduct a routine inspection.
Please review the employee health information with ALL your employees, have them sign the sign-in sheet and provide a copy to me by March 28, 2014. Please also provide a copy of your Northern Virginia Food Manager's card by March 28, 2014.

  • Critical: Responsibility of PIC to Require Food Employees to Report GI Symptoms or Cuts, Disease, Medical Condition or Exposure to PIC
    Observation: Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department provided and reviewed handouts and resource information in a red folder labeled "Employee Health Policy.
    Correction: A complete employee health policy must have the following elements:
    1) Employee training on foodborne illness, particularly symptoms of illness and prevention of the Big Five illnesses (see "What is Foodborne Illness" handout)
  • Critical: Hands and Arms / Cleaning Procedure (corrected on site)
    Observation: Observed food employees using improper handwashing procedures. Employee observed washing hands for less than 10 seconds, without soap.
    Correction: Food employees shall wash their hands and exposed portions of their arms by: 1) discarding used gloves
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: cheese slices at grill, 45F.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F. Additional ice was added to container.

The purpose of today's visit was to conduct a routine inspection. No violations were noted today. Facility was very clean, employees were doing an excellent job washing theirs hands and changing gloves. Temperatures were all within acceptable range.

Pretty much like your typical Five Guys restaurant you'd find elsewhere. Good burgers and hot dogs. I usually like to go with a bacon cheeseburger with most of the fix-ins, or if I’m in the mood, I’ll go for 2 bacon cheese dogs. If you’re getting fries, just go with the small size fries, as it really makes no difference what size you get. The people there usually stick the fries cup in the paper bag and then dump a giant scoop of fries into the cup and bag. Chomping down on their free peanuts is a good way to kill time as well while waiting for your order to come out.
