The purpose of today's visit was to conduct a risk factor assessment. The only violation noted was inadequate records for Time as a Public Health Control for the cooked french fries. The manager and I agreed that the best way to track that cooked french fries do not remain in the temperature danger zone for over two two hours (Five Guys policy- the Health Department allows 4 hours) is for each bucket of fries placed near the fryer to be marked with the time it was put out and a discard time. All cooked fries come from the one bucket and will be discarded after 2 hours if not sold.

The purpose of this visit is to conduct a routine inspection. Employee Health Policy in place. Sanitizer observed within acceptable limits. Facility has test kit. Observed 4 employees washing hands using proper technique during today's visit. Manager provided written instructions for Time as a public health control for par cooked french fires during inspection today. Manager exhibited Active managerial control by monitoring handwashing.
